Blueberry Crumb Bars

In the last 6 mos I have discovered my all time favorite pasttime is to BAKE.  Something about creating delicious treats for everyone I know to enjoy gets me really excited.  I practically get an addrenaline rush in the kitchen just waiting for the first person I find to try a bite.  And to make it even better its one of the best ways in my humble opinion to show someone you care about them.  I mean really who doesnt like fresh baked goods?

These blueberry crumb bars are out of this world.  This is one of those recipes that makes someones face light up with every bite.  I know Alex loved them as well as his roomates, I think they are part of the reason I am allowed to spend as much time as I do at the "corrall".

The bars are so amazing if you use fresh blueberries, I made them when it was prime blueberry season but frozen are always good too ..  this recipe is on smittenkitchen.com.


INGREDIENTS:
 1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold unsalted butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh blueberries
1/2 cup white sugar
4 teaspoons cornstarch

1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 9×13 inch pan.
2. In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and lemon zest. Use a fork or pastry cutter to blend in the butter and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
3. In another bowl, stir together the sugar, cornstarch and lemon juice. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
4. Bake in preheated oven for 45 minutes, or until top is slightly brown.
*depending on ur oven you may need to add more time

WAIT UNTIL THEY ARE COMPLETELY COOLED TO CUT! seriously or else you have a bit of a mess like I did.... I almost am ready to make another batch of these just thinking about them.
