I really love lemon flavored desserts. I found this cake on smittenkitchen.com one day @ work. Work has been pretty slow and this website has become my go-to! Technically it is a "lemon anything yogurt cake"- she used blueberries. I think rasberries and lemon are such an awesome combo I just changed the recipe to make it my own. It comes out so delicious and the glaze that I put over the cake made it really shine. The cake was not really desserty, I really liked it for breakfast in the morning, it kind of reminds me of the lemon pound cake they sell @ Starbucks, but obviously much better!! Oh and of course well recieved by both my parents and AY!
INGREDIENTS:
1 1/2 cups + 1 tablespoon all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 cup plain whole-milk yogurt
1 cup plus 1 tablespoon sugar
3 extra-large eggs
2 teaspoons grated lemon zest (approximately 2 lemons)
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1 1/2 cups rasberries
1/3 cup freshly squeezed lemon juice
1. Preheat the oven to 350°F. Grease loaf pan. Line the bottom with parchment paper. Grease and flour the pan- really go overboard on the greasing this cake sticks!
2. Sift together 1 1/2 cups flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, vanilla and oil. Slowly whisk the dry ingredients into the wet ingredients. Mix the rasberries with the remaining tablespoon of flour (this is so they do not sink- mine did anyway), and fold them very gently into the batter.
3. Bake for about 50 minutes, or until a cake tester is clean.
4. Cook the 1/3 cup lemon juice and remaining 1 tablespoon sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside
5. After the cake is finished let it cool for about 10 minutes before taking it out of the pan. I had a little difficulty getting it off the paper and got bit of help from my dad... after on the cooling rack pour the lemon mixture on the cake- this will make the cake really shine! Mine was so pretty!! ENJOY!

my rasberries still kind of sank to the bottom of the cake but I didnt mind tasted great!
