I impressed myself with this meal

Like I said earlier I think it is really special to take the time to cook/ bake for someone.  I really wanted to cook something impressive and delicious for AY for dinner.  I figured after long days @ work a thought out awesome dinner would really be fun.  Just making memories! I talked it over with my mom (who is amazing at cooking) and she suggested Poached Salmon in champagne dill sauce... ok wow first I love salmon and that just sounded too good to be true! and let me be cheesey real quick maybe a little romantic too! I really had a lot of fun preparing for this meal but it was very time consuming as I had to run around a little bit and gather everything, and lets be honest of course I forgot stuff and had to go back to the market.. anyways I prepared the salmon with roasted asparagus and an arugula salad and it was amazing really it was!

so for the yummiest salmon you will need:

2 salmon filets (I got the middle priced range salmon I dont remember what it was called)
6 tablespoons unsalted butter
3 tablespoons lemon juice
1/2 cup of champagne-
*they always say to buy a bottle that you would drink.. im broke so I had to ask my mom to buy this one so embarrassing
2 tablespoons chopped chives

SAUCE:
1/2 cup sour cream
2 tablespoons white sugar
2 tablespoons dill
1 tablespoon dijon mustard
2 tablespoons lemon juice
1 tablespoon chopped chives

Bring salmon to room temp.

melt butter over low heat in a large skillet.  stir in lemon juice, champagne, and chives  Place filets in skillet and baste. Cover and cook on low for 30 minutes or until fish cooks thru (it was like 25min)

whisk sauce ingredients and spoon over cooked salmon (this is the best part)
*the sauce is so good I had extra and saved in the fridge and used it as a dipping sauce with carrots, would be good on a burger also!

ARUGULA SALAD

1/2 lb arugula
Lemon Vinaigrette:
1/4 cup lemon juice (2 lemons)
1/2 cup oil oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 lb chunk of parmesan grated into shavings

cut off arugula roots if you prefer and sprinkle cheese over arugula- so simple and delicious!!

ROASTED ASPARAGUS

I just bought a bundle (is that the word) of asparagus.  Cut off bottoms and place spread on a cookie sheet.  drizzle 1 tablespoon of olive oil evenly on asparagus.  salt and pepper to taste.  cook at 400 degrees for 15 minutes... sprinkle parmesan cheese over cooked asparagus and put back in the oven until melted.

                                                        Finished product!! Im still so proud!
